We have transformed our land's most iconic dishes—such as Pepián and Hilachas—into a 100% plant-based experience. We honor the slow-cooking processes and the ingredients provided by the earth, replacing animal protein with the noble texture of oyster mushrooms and fresh vegetables, without ever losing the depth of flavor that defines our culture. Main Course: Vegan Pepián A deep and comforting vegan reimagining of the Guatemalan classic. Roasted oyster mushrooms in a rich tomato and chili sauce, infused with fresh cilantro. Simmered with potatoes, green beans, and chayote (güisquil). Served with rice and avocado.

A plant-based reimagining of the Guatemalan classic. Shredded oyster mushrooms, seared and slow-cooked in a traditional sauce of tomatoes, husk tomatoes (miltomate), and guaque chili, with potatoes and carrots. Served with rice and avocado. Choice of: Two corn tortillas or one small tamal.
